These Chocolate Protein Energy Bites are a tasty, nutrient-packed snack made with oats, flaxseeds, chia seeds, dried cherries, walnuts, peanut butter, almond butter, and chocolate protein powder. They offer a great balance of protein, healthy fats, and fiber, with a rich chocolate drizzle (optional) to finish.

Ingredients
  

  • ½ cup oats
  • ¼ cup ground flaxseeds
  • cup dried tart cherries
  • 2 tablespoons chia seeds
  • ½ cup Vega Sport Chocolate Protein Powder
  • ¼ cup diced walnuts
  • ¼ cup peanut butter
  • ¼ cup almond butter
  • 1 tsp vanilla extract
  • ¼ cup golden agave
  • ¼ cup oat milk
  • 1 bag Hu Gems or any chocolate of your choice for drizzling on top

Instructions
 

  • Combine Dry Ingredients: In a large bowl, combine the oats, ground flaxseeds, dried tart cherries, chia seeds, chocolate protein powder, and diced walnuts. Stir well to mix everything evenly.
  • Add Nut Butters: In a measuring cup, combine the peanut butter and almond butter. Add the nut butters to the dry ingredients in the bowl.
  • Blend Ingredients: Add vanilla extract and golden agave to the mixture. Use a hand blender or food processor to blend everything for about 1 minute, breaking down the nut butters into smaller pieces.
  • Add Oat Milk: While continuing to blend, add the oat milk gradually, blending until the mixture reaches a dough-like consistency, similar to playdough. It should be slightly sticky but firm enough to roll into balls.
  • Form the Bites: With your hands, roll the mixture into 1.5-inch balls and place them on a piece of parchment paper.
  • Prepare Chocolate Drizzle (Optional): Prepare your Hu Gems or any other chocolate you have according to package directions. Use a whisk to melt the chocolate and drizzle it over each energy bite.
  • Let the Chocolate Harden: Allow the chocolate to set and harden by letting the bites sit for about 1 hour at room temperature, or you can refrigerate them to speed up the process.
  • Enjoy! Once the chocolate has hardened, your delicious protein-packed energy bites are ready to be enjoyed!

Notes

If you make 12 bites, each bite would be around 160–170 calories. If you make 14 bites, each one would be closer to 140–150 calories.
